Tasty Tomato Bake
This is a delicious accompaniment ti a buttery baked potatoe
…So you will need:
7 Large Tomatoes
2 tbls tahini or peanut butter
2 tbls oil
1/tsp basil, oregano, paprika, sea salt
3 garlic cloves
3 cups cooked soy beans
a handful of hemp seeds
1 celery stick – diced
2 green peppers
4 tbls tamari
1/2 tsp garlic powder
Preheat the oven to 350 F. Then cut the tops off the tomatoes, and gently scoop out and save insides, leaving a ¼ inch thick shell. Then you need to heat the oil in a skillet over a medium heat, adding the garlic, vegetables and seasonings – this should be sautéed for about 5 minutes in total or until the food is tender.
The fun bit – mash the soy and hemp seed in a large bowl and add the vegetables, tahini and tomato insides. Season to taste and stuff the tomato shells with the mixture and bake for 10 minutes.
