Ingredients
1 tbls groundnut oil
1 tbls hempnut oil
500g raw beetroot, chopped into 1cm cubes
500g ripe tomatoes, peeled and chopped ( or tinned toms, chopped)
generous pinch of ground asafoetida (great for alleviating smelly flatulence)
1tsp cumin seeds
1 tsp black mustard seeds
2 dried red chillies
1/4 tsp dried tumeric
Method
Get a wok or similar instrument nice and hot – then heat the oil – when this gets very hot add the magic ingredient asafoetida. After 2 or 3 seconds add the mustard and cumin seeds.
Stir and then add the tomatoes (fresh can also be used) and cover until the popping noise subsides.
Add the cubed beetroot and turmeric, and simmer for 1 hour, or until the beetroot is tender. Add salt to taste.
When serving – serve hot and with a generous garnishing of crushed hemp hearts. A feast in itself, wth boiled rice and Indian breads.
Just the dish for warming your soul ! This easy to make soup will certainly nourish and fill up the whole family. Cheap to make too. It’s a real hit. Why not double up the ingredients and save for another day ?
