For these scrumptious muffins, you will need:
1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 ripe bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
1 cup hulled hemp seed
How to make the Muffins:
Firstly, preheat the oven to 375 Fahrenheit, and lightly grease 10 muffin cups.
In a large bowl, mix together the flour, baking soda, baking powder and salt.
In another bowl, beat together the bananas, sugar, egg and melted butter and stir the banana mixture into the flour mixture just until moistened. Spoon the batter into the prepared muffin cups.
Then, in a small bowl, mix together the brown sugar, flour, cinnamon and hulled hemp seed. Cut in the butter until the mixture resembles coarse cornmeal.
Here’s the Fun bit…Sprinkle the topping over muffins.
Bake in a preheated oven for 18 to 20 minutes.
One way to find out as to whether they are cooked inside – use a small knitting needle and insert into the centre, pull out the needle and if cooked, it will come out clean.
